A barby on the beach in Belize is an absolute treat. The seafood is superb and the range of fresh fruit and vegetables to compliment your meal is nothing short of sensational. A real highlight though is traditional Mayan Pibil, which consists of well-seasoned chicken and pork, wrapped in banana leaves and cooked in an underground oven. The flavour is simply amazing and the dish ideally suited to a relaxing evening on a warm starlit beach sipping wine and talking with friends
