A long time ago, before the invention of electricity, salt was critical to preserving, as well as seasoning food. In the early 20th century, Salt Island in Tortola, had around 100 people living there, who waited till April came around, when the salt ponds evaporated, so they could hack off chunks of the stuff for its many needed uses. Today of course, people pop to the shop for salt and the islands population has been reduced to around six West Indians!
