Santiago has a truly diverse choice of great food from all around the world but nothing can compare to the delicious local cuisine on offer. The wonderful variety of seafood and high quality produce from the local farmlands makes for some quite unique and toothsome dining. Seafood specialities include locus and chupe stew, raw or baked razor clams, steamed choritos (small muscles), conga eel cooked in various ways and deep water shrimp. Favourite meat dishes include chicken, kid and suckling pig, each cooked with fresh herbs and home grown spices to bring out the very best flavours and everything is served with a wide variety of domestic vegetables and fruit. A favourite aperitif is the very potent Pisco Brandy, which is served neat, with egg or with lime and sugar.
