Chichen Itza, the great Maya-Toltec ceremonial centre in the north of the Yucatan Peninsula, houses the most marvellous of the ancient ruins. Climb to the top of the Pyramid of Kukulkan, admire the Temple of a Thousand Columns or appreciate the beauty of other outstanding structures such as The Castle, The Ball Court and The Temple of Warriors. To end the day with an authentic flare try some chicken with chocolate sauce, a dish indigenous to the area. A mole (chocolate) sauce is used in many Mexican recipes, don’t be fooled though, it’s not the sweet treat you’d expect. Be prepared for hot, hot, hot!
